Our grassfed beef, available by the quarter, half, or whole, is priced competitively with grocery stores' factory-farmed beef but is more flavorful, humanely raised, and nutritionally superior. And when you directly support regenerative farming with your grocery budget, you're making an investment in the development of a sustainable, healthy, and dramatically different alternative to the prevailing system of resource intensive, ecologically devastating, industrialized food production.
Our beef comes from Scottish Highland Cattle raised outdoors with love. They spend the entirety of their lives on pasture and have never stepped inside a barn or other shelter. Highland cattle are an ancient heritage breed known for their exceptional meat quality. Grassfed Highland beef is a nutrient-dense, premium meat known for being leaner, lower in cholesterol, and higher in protein than conventional beef. Raised for about 30-33 months in our pastures, this slow-maturing breed produces a tender, well-marbled and flavorful meat that is rich in Omega-3 fatty acids. The flavor is described as having a deep, robust, and tender taste. It is unbelievably tender thanks to their slow growth rate and their unique double-coat that allows them to thrive on grass alone. Our goal in raising 100% grass-fed beef is to give our family and our customers the best nutritional benefits, which begins with healthy, stress-free animals raised without antibiotics in a natural environment.

Fall 2026: Our first butcher date for Highland Grass Fed Beef in 1/4, 1/2 or whole increments will occur in the September - November timeframe (exact dates to be confirmed with Jurek's when they build their fall calendar). A $200 deposit is required to reserve a quarter, a $300 deposit is required to reserve a half, and a $500 deposit is required to reserve a whole.
Fall 2027: Our next anticipated butcher date for grass fed beef will be in the fall of 2027
The beef offered in the fall of 2026 will be our first Highland Cattle offered for beef processing. Therefore, we have no historical data to offer weights other than typical industry averages, which are provided below:
Estimate Price Per Pound of Package Beef: We will process our beef at Jurek's which charges a dispatch fee of $75 per animal and $.75/lb for processing a whole or half a beef and $.80 for processing a quarter of beef. Our Beckon Hill Farms price is $6.50 per pound of hanging weight. This should result in the following approximate prices for packaged 100% grassfed Highland Beef:
For a whole, resulting in between 278 - 357 lbs of packaged beef, the average final price should be around $11.75 per pound.
For a half, resulting in between 139 - 179 lbs of packaged beef, the average final price should be around $11.75 per pound.
For a quarter, resulting in between 69 - 89 lbs of packaged beef, the average final price should be around $11.83 per pound.
Freezer Space:
For a whole, you will need about 16-20 cubic feet of space to properly store you packaged meat.
For a half, you will need about 8 - 10 cubic feet of space to properly store you packaged meat.
For a quarter, you will need about 4-5 cubic feet of space to properly store you packaged meat.
Live Weight is the weight of the cattle when we deliver it the butcher. An average Highland will weigh between 700-900 pounds.
Hanging Weight is the weight of the carcass after the head, hide, hooves, blood and innards are removed. This is about 60-65% of the live weights or about 540 - 585 lbs for a steer and 420 - 455 lbs for a cow.
Final Weight or Packaged Weight or Take Home Weight is weight of the meat the customer takes home. This is about 55% of the hanging weight which means a customer should bring home about 300lbs of packaged beef for a whole steer and about 240lbs for a whole cow. The exact amount will depend on the type of cuts you choose.
Q: I've never bought meat this way. How is the price calculated?
A: Your price is based on hanging weight, not live weight or packaged weight. You pay us $6.50/lb of hanging weight and you pay between $.85 - .$90/lb directly to the butcher for their processing and packaging services. We transport the animal to the butcher for you and you pick your meat up directly from the local butcher. You will have the opportunity to work with the butcher to specify exactly how you want your meat processed.

A: An average Highland steer weighs around 900lbs (live weight) and an average Highland cow weights around 700lbs (live weight) when taken to butcher. The hanging weight for Highland Cattle is about 60-65% of the live weight. The hanging weight is the weight of the animal after it has been field dressed but before it has been aged, cut, packaged and frozen. The final product (the packaged meat) should be around 278-357lbs for a whole beef, about a 139-179lbs for a half of beef, and about 69-89lbs for a quarter of beef.
